Asparagus Stuffed Chicken Breast

Asparagus-stuffed chicken breast is a delicious and elegant dish that combines the savory flavor of chicken with the freshness of asparagus. Here’s a simple recipe for you to try:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 bunch of asparagus, trimmed
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides. Lay the chicken breasts on a cutting board and, using a sharp knife, make a horizontal cut through the thickest part of each breast to create a pocket for stuffing.
  3. In a mixing bowl, combine the softened cream cheese, shredded mozzarella, minced garlic, dried oregano, and dried thyme. Mix well until all ingredients are evenly incorporated.
  4. Stuff each chicken breast pocket with the cream cheese mixture, pressing it down gently to ensure the filling is distributed evenly.
  5. Place 4-5 asparagus spears on top of the cream cheese mixture in each chicken breast.
  6. Secure the chicken breasts with toothpicks to keep the filling inside.
  7. In a skillet over medium-high heat, heat the olive oil. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  8. Transfer the seared chicken breasts to a baking dish. Drizzle lemon juice over the top.
  9. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and juices run clear.
  10. Remove the toothpicks before serving.
  11. Garnish with chopped fresh parsley if desired.
