Baked chipa guasu

Certainly! Here’s a recipe for Baked Chipa Guasu, a delicious Paraguayan corn casserole:

Ingredients:

  • 4 cups fresh corn kernels (you can use frozen or canned corn kernels if fresh aren’t available)
  • 4 eggs
  • 1 cup milk
  • 1 cup grated cheese (traditional Paraguayan chipa cheese is called “Queso Paraguay,” but you can use a mix of mozzarella and cheddar)
  • 1/2 cup cornmeal (polenta)
  • 1/2 cup chopped green onions (scallions)
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the fresh corn kernels and eggs. Mix them together until well combined.
  3. Add the milk, grated cheese, and cornmeal to the corn and egg mixture. Stir everything together until it forms a smooth batter.
  4. Heat the butter in a skillet over medium heat. Add the chopped green onions and sauté them for a few minutes until they become soft and fragrant.
  5. Pour the sautéed green onions into the batter, and mix them in. Season the mixture with salt and pepper to taste.
  6. Grease a baking dish or casserole dish with butter or cooking spray.
  7. Pour the chipa guasu batter into the prepared baking dish and spread it out evenly.
  8. Bake in the preheated oven for about 45-60 minutes or until the top becomes golden brown and the casserole is firm to the touch.
  9. Remove from the oven and let it cool for a few minutes before serving.
  10. Cut into squares or wedges and serve as a side dish or even a main course. Enjoy!
