CRUSTLESS VANILLA CHEESECAKE

A crustless vanilla cheesecake is a delightful dessert that’s rich, creamy, and perfect for those who prefer cheesecake without the crust. Here’s a simple recipe to make a delicious crustless vanilla cheesecake:

Ingredients:

For the Cheesecake Filling:

  • 24 ounces (about 3 cups) cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour (optional, for a firmer texture)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C). Place a baking dish with about 1 inch of water on the bottom rack of the oven. This will create steam and help prevent the cheesecake from cracking.
  2. Prepare the Springform Pan:
    • Grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper.
  3. Mix the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy, scraping down the sides of the bowl as needed.
    • Add the granulated sugar and beat until well combined.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
    • If you want a firmer texture, add the all-purpose flour and mix until just combined.
    • Finally, fold in the sour cream until the mixture is smooth and well blended.
  4. Pour and Bake:
    • Pour the cheesecake filling into the prepared springform pan.
  5. Bake:
    • Place the springform pan on the center rack of the preheated oven, directly above the pan with water.
    • Bake for about 45-55 minutes or until the edges are set but the center still has a slight jiggle when you gently shake the pan.
    • Turn off the oven and leave the cheesecake in the oven with the door ajar for about an hour to cool gradually.
  6. Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature on a wire rack.
    • Once it has cooled, refrigerate the cheesecake for at least 4 hours or overnight to set and firm up.
  7. Serve:
    • Before serving, you can optionally top the cheesecake with fresh fruit, berry compote, or a dusting of powdered sugar.
  8. Slice and Enjoy:
    • Use a sharp knife dipped in hot water to slice the cheesecake into pieces.
    • Serve and enjoy your delicious crustless vanilla cheesecake!

This cheesecake is wonderfully creamy and has a pure vanilla flavor. You can customize it further by adding your favorite toppings or serving it plain for a classic experience.
