- 4-5 medium potatoes (Yukon Gold or Russet), thinly sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth

- 1 cup heavy cream (or half-and-half for a lighter version)
- 1/2 tsp crushed red pepper flakes (optional, for a little heat)
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions:
- Cook the Sausage:
- Heat a large pot over medium heat and add a little olive oil.
- Add the Italian sausage, breaking it apart with a spoon, and cook until browned and fully cooked through. Remove the sausage from the pot and set it aside.
- Sauté the Vegetables:
- In the same pot, add the diced onion and cook for about 3-4 minutes until softened.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Simmer the Soup:
- Add the sliced potatoes to the pot, followed by the chicken broth. Stir to combine.
- Bring the soup to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, until the potatoes are tender.
- Add the Kale and Sausage:
- Add the chopped kale and cooked sausage back into the pot.
- Stir in the heavy cream, and season with salt, pepper, and red pepper flakes if desired.
- Final Simmer:
- Let the soup simmer for an additional 5 minutes to combine the flavors. Adjust seasoning to taste.
- Serve:
- Ladle the soup into bowls and serve hot. Optionally, you can top with some grated Parmesan cheese.
