Zucchini Sliders

Zucchini sliders are a delicious and healthy alternative to traditional sliders made with bread or buns. Here’s a simple recipe for zucchini sliders:

Ingredients:

  • 2 large zucchinis
  • 1 pound ground turkey or beef
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (optional)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Slider toppings: lettuce, tomato, cheese, condiments, etc.

Instructions:

  1. Prepare the Zucchini:
    • Cut the zucchinis into 1/2-inch thick rounds. These will be the “buns” for your sliders.
  2. Prep the Meat Mixture:
    • In a mixing bowl, combine the ground turkey or beef with grated Parmesan, breadcrumbs (if using), egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  3. Form Slider Patties:
    • Divide the meat mixture into small portions to form patties that are slightly smaller than the diameter of the zucchini rounds.
  4. Cook the Patties:
    • Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side or until they are cooked through and have a nice sear.
  5. Cook the Zucchini “Buns”:
    • In the same skillet or a separate one, cook the zucchini rounds for 1-2 minutes on each side, just until they are slightly tender but still have a bite to them.
  6. Assemble the Sliders:
    • Place a cooked zucchini round on a plate, add a cooked patty, and top with your favorite slider toppings such as lettuce, tomato, cheese, or condiments.
  7. Serve and Enjoy:
    • Arrange your zucchini sliders on a serving platter and enjoy this low-carb, flavorful alternative to traditional sliders.
