White Chocolate Cranberry Pecan Clusters

White Chocolate Cranberry Pecan Clusters are a delicious and festive treat, perfect for holidays or special occasions. Here’s a simple recipe you can follow to make them:

Ingredients:

  • 12 oz (340g) white chocolate chips or chopped white chocolate
  • 1 cup dried cranberries
  • 1 cup pecan halves (or chopped, if preferred)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of sea salt (optional)

Instructions:

  1. Prepare the Ingredients:

    • Chop the pecans if they aren’t already in small pieces.
    • Measure out the dried cranberries and set aside.
  2. Melt the White Chocolate:

    • In a heatproof bowl, melt the white chocolate. You can do this using a double boiler (place the bowl over a pot of simmering water) or microwave in 20-30 second intervals, stirring after each, until smooth and fully melted.
  3. Combine the Ingredients:

    • Once the white chocolate is melted, stir in the vanilla extract (if using).
    • Add the dried cranberries and pecans to the melted white chocolate and gently mix to coat evenly.
  4. Form the Clusters:

    • Line a baking sheet with parchment paper or a silicone mat.
    • Using a spoon, scoop small clusters of the chocolate mixture onto the prepared baking sheet. Each cluster can be about 1-2 tablespoons of the mixture.
  5. Chill:

    • Place the baking sheet in the fridge or freezer for about 30-60 minutes, or until the clusters are completely set.
  6. Serve and Enjoy:

    • Once the clusters have hardened, enjoy them right away! Store any leftovers in an airtight container in the fridge for up to a week.

These clusters are great for gifting or simply indulging in a sweet snack. The white chocolate adds sweetness, while the cranberries give a tart contrast, and the pecans offer a crunchy texture. Enjoy!
