Sure! Here’s a simple and delicious vegetable fritters recipe:

Ingredients:

  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 1/2 cup chopped spinach
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Olive oil or vegetable oil for frying

Instructions:

  1. Prepare the Vegetables:
    • Grate the zucchini and carrot using a grater.
    • Finely chop the onion, bell pepper, and spinach.
    • If using frozen corn, thaw and drain it.
  2. Mix the Ingredients:
    • In a large bowl, combine the grated zucchini, carrot, corn, onion, bell pepper, spinach, and minced garlic.
    • In a separate small bowl, beat the eggs and then add them to the vegetable mixture. Mix well.
    • Add the flour, baking powder, salt, black pepper, paprika (if using), and Parmesan cheese (if using) to the vegetable mixture. Stir until well combined. The mixture should be slightly thick and sticky. If it’s too watery, add a little more flour.
  3. Cook the Fritters:
    • Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan.
    • Once the oil is hot, drop spoonfuls of the vegetable mixture into the skillet, flattening them slightly with the back of the spoon to form fritters.
    • Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
    • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  4. Serve:
    • Serve the fritters hot, with your favorite dipping sauce. They go well with sour cream, tzatziki, or a spicy mayo.

Tips:

  • To make the fritters gluten-free, you can substitute the all-purpose flour with chickpea flour or gluten-free flour.
  • You can add other vegetables like grated sweet potato, peas, or chopped fresh herbs for extra flavor.
  • Make sure to squeeze out any excess moisture from the grated zucchini and carrot to ensure the fritters are crispy.
