Vanilla Custard Filled Donuts Recipe

Ingredients

For the Donuts:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 3/4 cup warm milk (about 110°F/45°C)
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3 tablespoons unsalted butter, softened
  • Vegetable oil, for frying

For the Vanilla Custard:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract

For Dusting:

  • Powdered sugar

Instructions

1. Make the Dough:

  1. In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the sugar, flour, and salt.
  3. Add the yeast mixture, eggs, and butter to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

2. Make the Vanilla Custard:

  1. In a medium saucepan, heat the milk over medium heat until it begins to simmer.
  2. In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
  3. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
  4. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
  5. Remove from heat, stir in the butter and vanilla extract, and let it cool completely. Cover with plastic wrap to prevent a skin from forming.

3. Fry the Donuts:

  1. Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick.
  2. Use a round cutter to cut out donut shapes and place them on a baking sheet lined with parchment paper.
  3. Cover the donuts with a clean cloth and let them rise for another 30 minutes.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Fry the donuts in batches until golden brown on both sides, about 1-2 minutes per side.
  6. Remove with a slotted spoon and drain on paper towels.

4. Fill the Donuts:

  1. Once the donuts are cool enough to handle, use a small knife to make a small hole in the side of each donut.
  2. Fill a piping bag fitted with a small round tip with the cooled vanilla custard.
  3. Pipe the custard into each donut until filled.

5. Dust with Powdered Sugar:

  1. Dust the filled donuts with powdered sugar before serving.
