Vanilla Custard Filled Donuts Recipe
Ingredients
For the Donuts:
- 2 1/4 teaspoons (1 packet) active dry yeast
- 3/4 cup warm milk (about 110°F/45°C)
- 1/4 cup granulated sugar
- 2 1/2 cups all-purpose flour, plus more for dusting
- 1/4 teaspoon salt
- 2 large eggs
- 3 tablespoons unsalted butter, softened
- Vegetable oil, for frying
For the Vanilla Custard:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons vanilla extract
For Dusting:
- Powdered sugar
Instructions
1. Make the Dough:
- In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the sugar, flour, and salt.
- Add the yeast mixture, eggs, and butter to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
2. Make the Vanilla Custard:
- In a medium saucepan, heat the milk over medium heat until it begins to simmer.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
- Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
- Remove from heat, stir in the butter and vanilla extract, and let it cool completely. Cover with plastic wrap to prevent a skin from forming.
3. Fry the Donuts:
- Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick.
- Use a round cutter to cut out donut shapes and place them on a baking sheet lined with parchment paper.
- Cover the donuts with a clean cloth and let them rise for another 30 minutes.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the donuts in batches until golden brown on both sides, about 1-2 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
4. Fill the Donuts:
- Once the donuts are cool enough to handle, use a small knife to make a small hole in the side of each donut.
- Fill a piping bag fitted with a small round tip with the cooled vanilla custard.
- Pipe the custard into each donut until filled.
5. Dust with Powdered Sugar:
- Dust the filled donuts with powdered sugar before serving.
