Sweet Potato Stuffed Fried White Oreos

Sweet Potato Stuffed Fried White Oreos is a fun and indulgent dessert that combines the crispy, golden exterior of fried Oreos with a twist of creamy, sweet potato filling. Here’s how to make them:

Ingredients:

  • For the sweet potato filling:
    • 1 medium sweet potato (peeled, cooked, and mashed)
    • 2 tablespoons butter
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon ground cinnamon (optional)
    • Pinch of salt
  • For the fried Oreos:
    • 1 package of White Oreos (or regular Oreos, if preferred)
    • 1 cup all-purpose flour
    • 1 tablespoon sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 large egg
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • Vegetable oil for frying (enough to submerge the Oreos)

Instructions:

  1. Prepare the sweet potato filling:
    • Cook the sweet potato by boiling or roasting it until soft.
    • Peel and mash the sweet potato, then mix it with butter, powdered sugar, vanilla extract, cinnamon (if using), and a pinch of salt. Set aside and allow it to cool.
  2. Stuff the Oreos:
    • Carefully separate the White Oreos. Using a spoon, spread a small amount of the sweet potato filling on one half of each Oreo, then place the other half back on top to close it. Gently press the edges together so the filling stays inside.
  3. Prepare the batter:
    • In a bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, whisk the egg, milk, and vanilla extract until smooth.
    • Gradually combine the wet ingredients with the dry ingredients to make a thick batter.
  4. Fry the stuffed Oreos:
    • Heat vegetable oil in a deep pot or skillet to about 350°F (175°C).
    • Dip each stuffed Oreo into the batter, ensuring it’s fully coated, then carefully drop it into the hot oil.
    • Fry for about 2-3 minutes or until golden and crispy. Make sure to flip them halfway through for even cooking.
    • Use a slotted spoon to remove the Oreos from the oil and place them on a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Dust the fried sweet potato stuffed Oreos with powdered sugar or cinnamon sugar for extra sweetness if desired. Serve warm.
