  • 2 tablespoons cornstarch
  • 2 teaspoons gelatin (or 1 packet of unflavored gelatin)
  • 2 tablespoons water

For the Snowy Coating:

  • 1 ½ cups heavy cream (for whipping)
  • 2 tablespoons powdered sugar
  • 1 cup shredded coconut (optional, for a snowy texture)
  • Edible glitter or powdered sugar (optional, for a sparkling effect)

Instructions:

For the Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy (about 3-4 minutes).
  4. Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Combine with dry ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  6. Bake the cakes: Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the Bavarian Cream:

  1. Prepare the gelatin: In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes.
  2. Heat the milk and cream: In a medium saucepan, combine the milk, heavy cream, and vanilla bean (if using). Heat over medium heat until hot but not boiling. Remove from heat.
  3. Whisk the yolks and sugar: In a bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
  4. Temper the yolks: Slowly pour a small amount of the hot milk mixture into the yolks, whisking constantly to prevent curdling. Gradually add the rest of the hot liquid to the yolks, whisking continuously.
  5. Cook the mixture: Return the custard mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens (about 5-7 minutes). Remove from heat.
  6. Add gelatin and vanilla: Stir in the bloomed gelatin and vanilla extract. Allow the custard to cool to room temperature, then refrigerate until it firms up.

For the Snowy Coating:

  1. Whip the cream: In a chilled bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  2. Assemble the cake: Once the cakes are completely cooled, slice each cake in half horizontally to create four layers. Place one layer of cake on a serving platter.
  3. Fill with Bavarian cream: Spread a generous amount of Bavarian cream filling on top of the first cake layer. Repeat with the remaining layers of cake and cream.
