Here’s a delicious and healthy recipe for Seedy Power Cookies, perfect for a quick snack or an energy boost:

Seedy Power Cookies Recipe

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup dried cranberries or raisins
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, sunflower seeds, chia seeds, flaxseeds, pumpkin seeds, sesame seeds, shredded coconut, and dried cranberries or raisins.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt until well combined.
  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients and mix thoroughly until all the dry ingredients are well coated.
  5. Shape Cookies: Using a spoon or your hands, form the mixture into small balls or drop spoonfuls onto the prepared baking sheet. Flatten them slightly with the back of a spoon or your hand.
  6. Bake: Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown around the edges.
  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Store: Store the cookies in an airtight container at room temperature for up to a week or in the refrigerator for up to two weeks.

Tips:

  • You can customize these cookies by adding your favorite nuts, seeds, or dried fruits.
  • If you prefer a softer cookie, reduce the baking time slightly.
  • For a more indulgent treat, you can add a handful of dark chocolate chips to the mixture.
