Sausage, Egg, and Cheese Breakfast Roll-Ups are a delicious and convenient way to enjoy a hearty breakfast. Here’s a simple recipe to make them:

Ingredients:

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese (or your preferred cheese)
  • 4 breakfast sausage links or 1/2 pound ground sausage
  • 4 large flour tortillas (8-inch size works well)
  • 1 tablespoon butter (for cooking)
  • Salt and pepper, to taste
  • Optional: hot sauce, salsa, or other toppings

Instructions:

  1. Cook the Sausage:

    • If using sausage links, cook them in a skillet over medium heat until fully cooked, about 5-7 minutes. Then slice them into smaller pieces.
    • If using ground sausage, cook it in a skillet over medium heat until browned and cooked through. Drain any excess grease.
  2. Scramble the Eggs:

    • In a bowl, whisk together the eggs and a pinch of salt and pepper.
    • Heat a non-stick skillet over medium heat and add the butter.
    • Pour the eggs into the skillet and scramble them until just set, about 2-3 minutes. Remove from heat.
  3. Assemble the Roll-Ups:

    • Lay each tortilla flat on a clean surface.
    • Place a spoonful of scrambled eggs in the center of each tortilla.
    • Add some of the cooked sausage on top of the eggs.
    • Sprinkle a generous amount of shredded cheese over the sausage and eggs.
    • If desired, add some hot sauce or salsa for extra flavor.
  4. Roll Them Up:

    • Fold in the sides of the tortilla and roll it up tightly to enclose the filling.
  5. Optional – Toast the Roll-Ups:

    • For a crispy finish, heat a bit of butter or oil in a skillet over medium heat.
    • Place the rolled-up tortillas seam-side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
  6. Serve:

    • Slice the roll-ups in half, serve with extra sauce if desired, and enjoy your delicious, portable breakfast!
