Rich Banana Bread

Posted on December 30, 2024

Here’s a recipe for a Rich Banana Bread that’s moist, flavorful, and indulgent:

Ingredients:

  • 2 to 3 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or full-fat yogurt (adds richness)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using). Set aside.
  3. Mix the wet ingredients: In a large bowl, beat the softened butter with the brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Mash the bananas: In a separate bowl, mash the bananas until smooth. Add the mashed bananas to the wet ingredients, and mix until combined.
  5. Combine the dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix, as this can make the bread dense.
  6. Add sour cream or yogurt: Fold in the sour cream or yogurt, which will help keep the bread extra moist and rich. If you’re adding nuts or chocolate chips, fold them in now.
  7. Bake the bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

This banana bread is wonderfully moist with a rich, buttery texture, and the addition of sour cream or yogurt makes it extra tender. Feel free to experiment with mix-ins like walnuts, chocolate chips, or even a drizzle of honey for added sweetness.
