Peanut Butter No Bake Cookies

Here’s a simple and delicious recipe for Peanut Butter No Bake Cookies:

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter (creamy or chunky, as preferred)
  • 3 cups quick-cooking oats
  • A pinch of salt (optional)

Instructions:

  1. Prepare Ingredients:
    • Measure out all ingredients beforehand. Line a baking sheet with parchment paper or wax paper.
  2. Cook the Sugar Mixture:
    • In a medium saucepan over medium heat, combine the granulated sugar, butter, and milk. Stir frequently until the mixture comes to a rolling boil.
    • Once it reaches a rolling boil, let it boil for 1 minute without stirring to ensure the sugar is fully dissolved and the mixture thickens slightly.
  3. Add Vanilla and Peanut Butter:
    • Remove the saucepan from the heat. Stir in the vanilla extract and peanut butter until the mixture is smooth and well combined.
  4. Add Oats:
    • Stir in the quick-cooking oats until they are fully coated with the peanut butter mixture.
  5. Form the Cookies:
    • Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten slightly if desired to shape them into cookies.
  6. Cool and Set:
    • Allow the cookies to cool and set at room temperature for about 20-30 minutes. For faster setting, you can place the baking sheet in the refrigerator for about 15 minutes.
  7. Enjoy:
    • Once the cookies are set, they are ready to eat. Store them in an airtight container at room temperature or in the refrigerator for a firmer texture.

Tips:

  • For added flavor, you can mix in a handful of chocolate chips, chopped nuts, or dried fruits before forming the cookies.
  • Ensure you let the sugar mixture boil for a full minute; this helps the cookies set properly.
  • If the mixture is too dry, you can add a bit more milk. If it’s too wet, add more oats.
