Mediterranean Spinach and Feta Crisps are a delicious and healthy snack! They combine the savory flavors of spinach, feta, and Mediterranean herbs in a crispy form. Here’s a simple recipe to make these delightful crisps:

Ingredients:

  • 1 1/2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1/2 cup whole wheat flour (or gluten-free flour if preferred)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1/4 cup olive oil (plus extra for greasing)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. Prepare the spinach: Sauté the chopped spinach in a small pan over medium heat for 2-3 minutes until wilted. Allow it to cool and then squeeze out excess moisture using a paper towel.

  3. Mix dry ingredients: In a large bowl, combine the whole wheat flour, oregano, garlic powder, salt, and pepper.

  4. Combine wet ingredients: In a separate bowl, whisk the egg and olive oil together. Stir in the crumbled feta cheese, sun-dried tomatoes (if using), and the cooked spinach.

  5. Form the dough: Add the dry ingredients to the wet ingredients and stir until well combined. The mixture should be thick and slightly sticky.

  6. Shape the crisps: Use a spoon or your hands to form small, flat rounds of dough (about 1 tablespoon each) on the prepared baking sheet, leaving a little space between each one. If you like, sprinkle the tops with grated Parmesan cheese for extra flavor.

  7. Bake: Bake for 15-20 minutes or until the crisps are golden brown and crispy on the edges.

  8. Cool and serve: Let the crisps cool for a few minutes before serving. They make a great snack on their own or can be paired with a dip, like tzatziki, for extra Mediterranean flair!
