Ingredients:

For the Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • Pinch of salt

For the Bowl:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare Quinoa:
    • In a medium saucepan, combine quinoa, water, and a pinch of salt.
    • Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed.
    • Fluff quinoa with a fork and set aside.
  2. Make the Dressing:
    • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper. Set aside.
  3. Sauté Vegetables:
    • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
    • Add minced garlic and sauté for about 30 seconds until fragrant.
    • Add cherry tomatoes and cook for 2-3 minutes until slightly softened.
    • Remove from heat and let cool slightly.
  4. Assemble the Bowl:
    • In a large bowl, combine cooked quinoa, sautéed tomatoes, diced cucumber, chopped red onion, Kalamata olives, crumbled feta cheese, and fresh parsley.
    • Pour the dressing over the mixture and toss until everything is well coated.
    • Season with salt and pepper to taste.
  5. Serve:
    • Divide the mixture into bowls and serve immediately.
