Italian Drunken Noodles is a flavorful and hearty pasta dish inspired by the bold flavors of Italian cuisine. Here’s a simple recipe for you to try:

Ingredients:

  • 8 ounces pappardelle or fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound Italian sausage, casings removed
  • 1 onion, thinly sliced
  • 3 bell peppers (red, yellow, and green), thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry red wine (such as Chianti)
  • 1/2 cup chicken or vegetable broth
  • Salt and black pepper, to taste
  • 1/2 cup fresh basil, chopped
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the Pasta:
    • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Brown the Sausage:
    • In a large skillet, heat olive oil over medium-high heat.
    • Add the Italian sausage, breaking it apart with a spoon as it cooks. Cook until browned and cooked through. Remove any excess fat if necessary.
  3. Sauté Vegetables:
    • Add sliced onions, bell peppers, minced garlic, and red pepper flakes to the skillet. Sauté until the vegetables are softened and aromatic.
  4. Deglaze with Wine:
    • Pour in the red wine, scraping the bottom of the skillet to deglaze and incorporate any flavorful bits. Allow the wine to reduce by half.
  5. Add Broth and Tomatoes:
    • Pour in the chicken or vegetable broth and add the halved cherry tomatoes. Simmer for a few minutes until the tomatoes begin to soften.
  6. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet, tossing to coat the noodles with the flavorful sauce. Allow everything to heat through.
  7. Season and Garnish:
    • Season the dish with salt and black pepper to taste. Stir in the fresh basil.
  8. Serve:
    • Transfer the Italian Drunken Noodles to a serving platter. Serve hot, and garnish with grated Parmesan cheese.
