Ingredients:

For the Donuts:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract

For Frying:

  • Vegetable oil, for frying

For Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
    • Let the batter rest for 10-15 minutes.
  2. Heat the Oil:
    • In a deep fryer or a heavy-bottomed pan, heat about 2 inches of vegetable oil to 350°F (175°C).
  3. Forming Mini Donuts:
    • Drop small spoonfuls of batter into the hot oil, forming mini donuts. You can use a mini donut maker or just shape them with two spoons.
    • Fry the donuts until they are golden brown, turning them to ensure even cooking. This usually takes about 2-3 minutes per side.
  4. Coat the Donuts:
    • In a shallow bowl, mix the sugar and ground cinnamon for coating.
