Sure! Here’s a simple recipe for homemade veggie-filled dough, also known as vegetable-filled pastries or pockets.

Ingredients:

For the Dough:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 3 tablespoons olive oil

For the Filling:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup grated carrots
  • 1 cup chopped spinach
  • 1 cup diced mushrooms
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup peas (fresh or frozen)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 cup grated cheese (optional)

Instructions:

For the Dough:

  1. Activate the Yeast:
    • In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • Make a well in the center and add the yeast mixture and olive oil.
    • Mix until the dough starts to come together.
  3. Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until it is smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

For the Filling:

  1. Prepare the Vegetables:
    • Heat olive oil in a large skillet over medium heat.
    • Add the onion and garlic, and sauté until they become translucent.
  2. Cook the Filling:
    • Add the bell peppers, carrots, spinach, mushrooms, corn, and peas to the skillet. Cook until the vegetables are tender.
    • Season with salt, black pepper, cumin powder, paprika, and oregano. Mix well and cook for another 5 minutes.
    • If using, stir in the grated cheese. Remove from heat and let the filling cool.

Assembling the Veggie-Filled Dough:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll Out the Dough:
    • Punch down the risen dough and divide it into equal portions (about 8-10 pieces).
    • Roll each piece into a ball and then flatten it into a circle (about 6 inches in diameter) on a lightly floured surface.
  3. Fill the Dough:
    • Place a spoonful of the vegetable filling in the center of each dough circle.
    • Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal them, and crimp with a fork for a decorative edge.
  4. Bake the Veggie-Filled Dough:
    • Place the filled dough pockets on the prepared baking sheet.
    • Brush the tops with a little olive oil or milk for a golden finish.
    • Bake in the preheated oven for 20-25 minutes, or until the dough is golden brown.
  5. Serve:
    • Let the veggie-filled pockets cool slightly before serving. Enjoy them warm or at room temperature!
