Homemade chicken noodle soup

Homemade chicken noodle soup is a classic and comforting dish, perfect for warming up on a cold day or when you’re feeling under the weather. Here’s a simple recipe to make a delicious batch of chicken noodle soup from scratch:

Ingredients:

  • 1 whole chicken (about 4-5 pounds), cut into pieces
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3-4 cloves of garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 8 cups of water (or chicken broth for a stronger flavor)
  • Salt and pepper to taste
  • 2 cups egg noodles (or any pasta of your choice)
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. In a large pot, place the chicken pieces, chopped onion, sliced carrots, celery, minced garlic, bay leaves, and dried thyme.
  2. Pour in the water (or chicken broth) to cover the ingredients. If using water, you can add a bouillon cube or chicken stock base for extra flavor. Season with salt and pepper.
  3. Bring the pot to a boil, then reduce the heat to a simmer. Cover and let it cook for about 1.5 to 2 hours, or until the chicken is tender and fully cooked.
  4. Remove the chicken from the pot and set it aside to cool. Once it’s cool enough to handle, shred the meat and discard the bones and skin.
  5. While the chicken is cooling, return the pot to the stove and bring the broth back to a boil. Add the egg noodles or pasta of your choice. Cook according to the pasta’s package instructions, typically around 8-10 minutes.
  6. When the pasta is cooked, add the shredded chicken back into the pot and let it heat through for a few minutes.
  7. Taste the soup and adjust the seasoning with more salt and pepper if needed.
  8. Remove the bay leaves and discard them.
  9. Ladle the hot chicken noodle soup into bowls. Garnish with chopped fresh parsley if desired.
  10. Serve your homemade chicken noodle soup hot, and enjoy!

This recipe makes a hearty and comforting chicken noodle soup with tender chicken, flavorful broth, and perfectly cooked noodles. It’s a great meal on its own or served with some crusty bread for a complete and satisfying dinner.
