Grilled Steak Quesadilla with Pineapple

A Grilled Steak Quesadilla with Pineapple sounds like a delicious and refreshing twist on the classic quesadilla! Here’s a simple recipe to make it:

Ingredients:

  • 2 small steaks (sirloin, flank, or ribeye work well)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon chili powder (optional)
  • 1 teaspoon cumin
  • 1 tablespoon lime juice
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 1 cup diced fresh pineapple
  • 1 medium onion, thinly sliced
  • 1-2 flour tortillas
  • Fresh cilantro (optional)
  • Sour cream or salsa (optional)

Instructions:

  1. Grill the Steak:

    • Preheat the grill or a grill pan over medium-high heat.
    • Rub the steaks with olive oil, salt, pepper, chili powder, cumin, and lime juice.
    • Grill the steaks for about 4-6 minutes per side, or until they reach your preferred doneness.
    • Let the steak rest for a few minutes before slicing it thinly against the grain.
  2. Caramelize the Pineapple:

    • Heat a small skillet over medium heat.
    • Add the diced pineapple and cook for 2-3 minutes, stirring occasionally, until the pineapple starts to caramelize and turn golden brown.
    • Remove from heat and set aside.
  3. Sauté the Onion:

    • In the same skillet, sauté the sliced onion for 2-3 minutes until softened and lightly browned.
  4. Assemble the Quesadilla:

    • Heat a large skillet over medium heat or use a grill pan.
    • Place a tortilla in the skillet and sprinkle a generous amount of cheese over one side.
    • Add the grilled steak slices, caramelized pineapple, and sautéed onions.
    • Top with more cheese and cover with the second tortilla.
  5. Grill the Quesadilla:

    • Cook for 2-3 minutes on each side, pressing down gently with a spatula until the tortilla is golden and crispy, and the cheese is melted.
  6. Serve:

    • Remove from the skillet and slice into wedges.
    • Garnish with fresh cilantro, and serve with sour cream or salsa on the side.
