Grilled Deer Tenderloin with Broccoli and Cauliflower

Ingredients:

  • 1 pound deer tenderloin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika (optional)
  • 1 head broccoli, cut into florets
  • 1 head cauliflower, cut into florets
  • Lemon wedges for serving (optional)

Instructions:

  1. Marinate the Deer Tenderloin:
    • In a bowl, mix together salt, pepper, olive oil, garlic powder, onion powder, thyme, paprika, cumin, coriander, and smoked paprika (if using).
    • Rub the deer tenderloin with the marinade, ensuring it is well coated. Let it marinate for at least 30 minutes to allow the flavors to meld.
  2. Prepare the Grill:
    • Preheat your grill to medium-high heat.
  3. Grill the Deer Tenderloin:
    • Place the marinated deer tenderloin on the preheated grill. Grill for about 4-5 minutes per side, or until the internal temperature reaches your desired level of doneness (medium-rare is recommended for tenderloin).
  4. Roast the Vegetables:
    • While the deer tenderloin is grilling, prepare the broccoli and cauliflower. Toss the florets with a bit of olive oil, salt, and pepper.
    • You can either roast the vegetables in the oven or on the grill. If using the oven, preheat it to 400°F (200°C) and roast the vegetables for about 20-25 minutes or until they are tender with crisp edges.
  5. Serve:
    • Once the deer tenderloin is cooked to your liking, remove it from the grill and let it rest for a few minutes before slicing.
    • Arrange the grilled deer slices on a plate alongside the roasted broccoli and cauliflower.
  6. Optional:
    • Squeeze fresh lemon juice over the deer tenderloin before serving for a burst of citrus flavor.
