Gooey Chocolate Lava Cookies RecipeThese cookies are soft on the outside with a warm, gooey chocolate center. Here’s how to make them:
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup mini marshmallows (optional, for extra gooeyness)
- 4 oz semi-sweet or milk chocolate (for the center)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the lava centers: Break the chocolate into small chunks or use chocolate chips. Take about 1 tablespoon of chocolate and roll it into a ball. Repeat with the remaining chocolate and freeze these balls for at least 15 minutes (or until hard).
- Mix dry ingredients: In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
- Cream butter and sugars: In a large bowl, beat the softened butter with both granulated sugar and brown sugar until light and fluffy (about 3 minutes). Add the egg and vanilla extract, and mix until fully incorporated.
- Combine wet and dry ingredients: Gradually add the dry ingredients into the wet mixture. Mix until just combined. You should have a thick dough.
- Form the cookies: Take a tablespoon of dough and flatten it out in your hand. Place a frozen chocolate ball in the center, and then wrap the dough around the chocolate, sealing it completely. Repeat with the rest of the dough and chocolate balls.
- Bake: Place the cookie balls on the prepared baking sheet, spaced about 2 inches apart. Bake for about 8-10 minutes, or until the edges are set but the centers are still soft. (They will continue to cook on the baking sheet after being removed from the oven.)
- Cool slightly and enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. When you bite into them, the center should ooze with warm chocolate!
Tips:
- For extra gooeyness, you can add mini marshmallows to the center along with the chocolate.
- Make sure the chocolate center is frozen before baking; otherwise, it might melt too quickly and not create a gooey lava effect.
Enjoy your gooey chocolate lava cookies with a glass of milk!
