Glazed Jam-Filled Cookies

Glazed jam-filled cookies are a delightful treat, perfect for any occasion. Here’s a recipe to make these sweet, jam-filled cookies with a glossy glaze:

Ingredients:

For the cookies:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup fruit jam (strawberry, raspberry, apricot, or your favorite)

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk (or more, to adjust consistency)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. Prepare the cookie dough:

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract, and continue mixing until combined.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. Be careful not to overwork the dough.

3. Shape the cookies:

  • Roll the dough into small balls, about 1 tablespoon of dough each. Place them on the prepared baking sheet.
  • Use your finger or the back of a spoon to make a small indentation in the center of each cookie.
  • Spoon about 1/2 teaspoon of jam into each indentation.

4. Bake the cookies:

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

5. Prepare the glaze:

  • In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt. Adjust the consistency by adding more milk if needed—it should be thick enough to coat the back of a spoon.

6. Glaze the cookies:

  • Once the cookies are completely cooled, drizzle or spread the glaze over the top of each cookie.
  • Let the glaze set for about 10 minutes before serving.

7. Serve and enjoy:

  • Serve these delicious glazed jam-filled cookies with tea or coffee, or simply as a sweet treat any time!
