Easy Caramelized Onion Pork Chops

Certainly! Here’s a simple recipe for Caramelized Onion Pork Chops:

Ingredients:

  • 4 bone-in pork chops
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/4 cup balsamic vinegar
  • 1/2 cup chicken broth
  • Fresh thyme or parsley for garnish (optional)

Instructions:

  1. Season the Pork Chops:
    • Pat the pork chops dry with paper towels.
    • Season both sides of the pork chops with salt and black pepper.
  2. Sear the Pork Chops:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the pork chops and sear on both sides until golden brown, about 3-4 minutes per side.
    • Remove the pork chops from the skillet and set aside.
  3. Caramelize the Onions:
    • In the same skillet, add the sliced onions and butter.
    • Cook the onions over medium-low heat until they become soft and caramelized, stirring occasionally. This may take about 15-20 minutes.
  4. Add Brown Sugar and Balsamic Vinegar:
    • Sprinkle brown sugar over the caramelized onions and stir to combine.
    • Pour in the balsamic vinegar and continue to cook for an additional 2-3 minutes until the mixture thickens slightly.
  5. Deglaze with Chicken Broth:
    • Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
    • Let the mixture simmer for a few minutes until it thickens to your desired consistency.
  6. Return Pork Chops to the Skillet:
    • Place the seared pork chops back into the skillet, nestling them into the caramelized onion mixture.
    • Spoon some of the onion mixture over the pork chops.
  7. Finish Cooking:
    • Cover the skillet and simmer on low heat for about 10-15 minutes or until the pork chops are cooked through, reaching an internal temperature of 145°F (63°C).
  8. Garnish and Serve:
    • Garnish with fresh thyme or parsley if desired.
    • Serve the caramelized onion pork chops with the onion mixture spooned over the top.
