Decadent Chocolate Cake

Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or coffee (helps intensify the chocolate flavor)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla to the dry ingredients. Beat on medium speed until smooth and combined, about 2-3 minutes.
  4. Reduce the speed to low and carefully add the hot water or coffee. The batter will be thin, but that’s perfect for a moist cake.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Buttermilk Frosting

Ingredients:

  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 3 tbsp buttermilk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a large bowl, beat the softened butter with an electric mixer until creamy and smooth.
  2. Add the powdered sugar, one cup at a time, mixing well after each addition.
  3. Add the buttermilk, vanilla extract, and a pinch of salt. Continue to beat until the frosting is fluffy and smooth. If it’s too thick, you can add a little more buttermilk; if it’s too thin, add a bit more powdered sugar until you reach the desired consistency.
  4. Frost the cooled cakes with a generous amount of frosting between the layers and over the top.

Assembling the Cake:

  1. Place one cake layer on a serving plate or cake stand.
  2. Spread a layer of frosting on top of the first cake layer.
  3. Add the second layer of cake and frost the top and sides generously.
  4. For a decorative touch, you can add chocolate shavings, sprinkles, or even a drizzle of melted chocolate on top.
