Dandelion Lemon Drop Pops

Here’s a refreshing and whimsical recipe for Dandelion Lemon Drop Pops – perfect for a sunny day or a garden party!


🍋 Dandelion Lemon Drop Pops

Ingredients:

  • 1 cup fresh dandelion petals (pesticide-free, yellow parts only)

  • 1 cup water

  • ½ cup honey or sugar

  • ½ cup fresh lemon juice (about 2–3 lemons)

  • 1 tsp lemon zest

  • 1 ½ cups cold water

  • Optional: a few fresh mint leaves or edible flowers for decoration


Instructions:

  1. Make Dandelion Syrup:

    • In a small pot, bring 1 cup water and dandelion petals to a boil.

    • Reduce heat and simmer for 5–10 minutes.

    • Strain petals and return the liquid to the pot.

    • Add honey (or sugar) and stir until fully dissolved. Let cool.

  2. Mix the Popsicle Base:

    • In a large bowl or pitcher, combine:

      • Dandelion syrup

      • Lemon juice

      • Lemon zest

      • 1½ cups cold water

    • Stir well and taste. Add more honey or lemon if needed.

  3. Fill and Freeze:

    • Pour mixture into popsicle molds.

    • Optional: Drop in a mint leaf or an edible flower into each mold for a pretty touch.

    • Insert sticks and freeze for at least 4–6 hours, or overnight.

  4. Unmold and Enjoy:

    • Run warm water over the outside of molds for a few seconds to release the pops.

    • Enjoy your tangy, floral treat!
