Creamy Tuscan Spaghetti with Jumbo Scallops

Ingredients:

  • For the Scallops:
    • 1 pound jumbo sea scallops
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    • 2 tablespoons butter
  • For the Tuscan Spaghetti:
    • 12 ounces spaghetti
    • 2 tablespoons olive oil
    • 3 cloves garlic, minced
    • 1 cup cherry tomatoes, halved
    • 2 cups baby spinach
    • 1 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup chicken broth
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
    • 1/4 teaspoon red pepper flakes (optional)
    • Fresh basil leaves, for garnish

Instructions:

  1. Prepare the Scallops:
    • Pat the scallops dry with a paper towel and season them with salt and pepper.
    • In a large skillet, heat olive oil and butter over medium-high heat.
    • Add the scallops to the skillet and sear for about 2-3 minutes per side, until they are golden brown and cooked through. Remove from the skillet and set aside.
  2. Cook the Spaghetti:
    • Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  3. Make the Creamy Tuscan Sauce:
    • In the same skillet used for the scallops, add the olive oil and garlic. Sauté for about 1 minute until fragrant.
    • Add the cherry tomatoes and cook for about 2-3 minutes until they start to soften.
    • Stir in the baby spinach and cook until wilted.
    • Pour in the heavy cream, chicken broth, and add the Italian seasoning. Stir to combine.
    • Let the mixture simmer for about 5 minutes, allowing the sauce to thicken slightly.
    • Add the grated Parmesan cheese and stir until melted and the sauce is creamy.
    • Season with salt, pepper, and red pepper flakes if using.
  4. Combine and Serve:
    • Add the cooked spaghetti to the skillet with the creamy Tuscan sauce. Toss to coat the pasta evenly.
    • Plate the spaghetti and top with the seared scallops.
    • Garnish with fresh basil leaves.
