Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce

Here’s a recipe for Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce that’s rich and full of flavor. This dish is a comfort food favorite that’s quick to prepare!

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning

For the Sauce:

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Pasta:

  • 8 oz rotini pasta (or any pasta of your choice)
  • Salt (for the pasta water)

Optional Garnish:

  • Fresh parsley, chopped
  • Extra Parmesan for topping

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook the rotini according to the package directions until al dente. Drain and set aside.
  2. Cook the Chicken:

    • While the pasta is cooking, season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning on both sides.
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side until golden and cooked through. The internal temperature should reach 165°F (75°C). Once cooked, remove the chicken from the skillet and set it aside.
  3. Make the Sauce:

    • In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
    • Pour in the heavy cream and chicken broth. Stir to combine and bring to a simmer. Let the sauce cook for 3-5 minutes, allowing it to thicken slightly.
    • Stir in the Parmesan cheese and Italian seasoning. Continue stirring until the cheese is fully melted and the sauce becomes smooth. Season with salt and pepper to taste.
  4. Combine:

    • Slice the cooked chicken into strips or bite-sized pieces.
    • Add the drained pasta to the sauce, tossing to coat the pasta in the creamy Parmesan sauce.
    • Add the sliced chicken on top or mix it in with the pasta, depending on your preference.
  5. Serve:

    • Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
    • Serve immediately and enjoy!

Tips:

  • You can swap the chicken for shrimp or even keep it vegetarian by adding veggies like spinach, mushrooms, or sun-dried tomatoes.
  • For a little heat, add a pinch of red pepper flakes to the sauce.
