Here’s a recipe for Creamy Apple Pie that’s rich and luscious, with a smooth filling and a flaky crust:

Ingredients:

Crust:

  • 2 ½ cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup unsalted butter (cold and cubed)
  • ¼ to ½ cup ice water

Creamy Filling:

  • 6 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • ½ cup sugar
  • ¼ cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract
  • ½ cup heavy cream
  • ½ cup sour cream
  • 2 tbsp butter (melted)

Topping (Optional):

  • Whipped cream or vanilla ice cream for serving

Instructions:

1. Make the Pie Crust:

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Add the cold butter cubes and cut into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Gradually add ice water (starting with ¼ cup) and mix until the dough comes together. Add more water as needed.
  4. Form the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Once chilled, roll out one dough disc to fit a 9-inch pie dish. Reserve the second disc for the top crust or decoration.

2. Prepare the Creamy Apple Filling:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apples with the sugar, brown sugar, flour, cinnamon, nutmeg, and cloves. Mix well.
  3. Add the vanilla extract, heavy cream, sour cream, and melted butter. Stir until the apples are well coated.

3. Assemble the Pie:

  1. Pour the apple filling into the prepared pie crust.
  2. Roll out the second dough disc and place it over the top of the apples. You can create a lattice pattern or leave it whole with slits cut for steam to escape.
  3. Seal the edges of the pie by crimping with your fingers or a fork.

4. Bake:

  1. Brush the top crust with a little cream or milk and sprinkle with sugar if desired.
  2. Bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
  3. Let the pie cool slightly before serving.

5. Serve:

Slice the pie and serve warm with whipped cream or vanilla ice cream.
