Ingredients:
- 4 boneless, skinless chicken breasts, pounded thin
- Salt and pepper to taste
- 1 cup all-purpose flour, for dredging
- 4 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Zest of 1 lemon
- Juice of 2 lemons
- 1 cup chicken broth
- 1/2 cup dry white wine
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- Lemon slices and fresh parsley for garnish
Instructions:
- Season the chicken breasts with salt and pepper on both sides.
- Dredge each chicken breast in flour, shaking off excess.
- In a bowl, whisk together eggs, Parmesan cheese, chopped parsley, and lemon zest.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
- Dip each floured chicken breast into the egg mixture, coating evenly, and place them in the skillet.
- Cook the chicken for about 3-4 minutes on each side or until golden brown and cooked through. Transfer the cooked chicken to a plate and set aside.
- In the same skillet, add wine, lemon juice, and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce heat to medium-low and stir in the remaining 2 tablespoons of butter until melted and the sauce has thickened slightly.
- Return the cooked chicken to the skillet, spooning some of the sauce over the top. Let it simmer for an additional 2-3 minutes.
- Garnish with lemon slices and fresh parsley.
Serve the Chicken Francese over pasta, rice, or with crusty bread. The tangy lemon and rich buttery sauce make this dish a flavorful and satisfying meal. Enjoy!
