Chicken and noodle skillet dish

Here’s a simple and delicious chicken and noodle skillet recipe that you can prepare in one pan. It’s a great option for a quick weeknight dinner.

Chicken and Noodle Skillet Dish

Ingredients:

  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) milk
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 8 oz (225g) egg noodles
  • 1 cup (120g) frozen peas (optional)
  • 1 cup (120g) shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
    • Remove the chicken from the skillet and set it aside.
  2. Sauté Onion and Garlic:
    • In the same skillet, add the diced onion and cook for 3-4 minutes until softened.
    • Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Prepare the Sauce:
    • Stir in the chicken broth, milk, and cream of chicken soup. Mix until well combined.
  4. Cook the Noodles:
    • Add the egg noodles to the skillet, making sure they are submerged in the sauce.
    • Bring the mixture to a simmer, then cover the skillet and cook for 8-10 minutes, stirring occasionally, until the noodles are tender.
  5. Combine Everything:
    • Return the cooked chicken to the skillet.
    • If using, add the frozen peas and cook for an additional 2-3 minutes until heated through.
  6. Add Cheese:
    • Sprinkle the shredded cheddar cheese over the top and stir until melted and creamy.
  7. Serve:
    • Garnish with fresh parsley and serve hot.
