Chicken and Dumplings recipe

Here’s a classic recipe for Chicken and Dumplings that’s sure to be comforting and delicious:

Chicken and Dumplings Recipe

Ingredients

For the Chicken Stew:

  • 4 boneless, skinless chicken breasts or thighs (or a mix of both)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1/4 cup heavy cream

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 4 tablespoons butter, melted

Instructions

1. Prepare the Chicken Stew:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Season the chicken with salt and pepper, then add to the pot. Cook until browned on all sides. Remove the chicken and set aside.
  3. In the same pot, add the onion, carrots, and celery. Cook until the vegetables start to soften, about 5-7 minutes.
  4. Add the garlic and cook for another minute.
  5. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
  6. Gradually add the chicken broth while stirring continuously to avoid lumps. Bring to a simmer.
  7. Add the thyme, rosemary, bay leaf, and the browned chicken. Let it simmer until the chicken is cooked through and tender, about 20-25 minutes.
  8. Remove the chicken, shred it using two forks, and return it to the pot.
  9. Stir in the heavy cream and frozen peas. Adjust seasoning with salt and pepper as needed.

2. Make the Dumplings:

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Add the melted butter and buttermilk, stirring just until combined. Do not overmix.
  3. Drop spoonfuls of the dumpling batter onto the simmering stew. The dumplings should be about the size of a tablespoon.
  4. Cover the pot and let the dumplings cook for 15-20 minutes. Do not lift the lid during this time to ensure the dumplings cook through and become fluffy.

3. Serve:

  • Ladle the chicken and dumplings into bowls and enjoy warm.

Tips

  • For extra flavor, use a mix of chicken thighs and breasts.
  • You can add other vegetables like potatoes or corn for variety.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove to avoid overcooking the dumplings.
