Blueberry Cream Cheese Frosting

πŸ‡ Ingredients:

  • 1/2 cup fresh or frozen blueberries

  • 1 tablespoon lemon juice

  • 1 tablespoon granulated sugar (optional, depending on tartness)

  • 8 oz (1 package) cream cheese, softened

  • 1/2 cup (1 stick) unsalted butter, softened

  • 3–4 cups powdered sugar, sifted

  • 1 teaspoon vanilla extract

  • Pinch of salt


🧁 Instructions:

  1. Make Blueberry Reduction:

    • In a small saucepan, combine blueberries, lemon juice, and sugar.

    • Cook over medium heat until the berries burst and the mixture thickens (about 8–10 minutes).

    • Press through a fine mesh sieve to remove skins. Let it cool completely.

  2. Cream Butter & Cream Cheese:

    • In a large bowl, beat cream cheese and butter until smooth and fluffy (2–3 minutes).

  3. Add Blueberry Puree:

    • Add the cooled blueberry reduction and vanilla extract to the cream mixture. Mix until fully combined.

  4. Add Powdered Sugar:

    • Gradually beat in powdered sugar, 1 cup at a time, until you reach your desired consistency and sweetness.

  5. Chill (if needed):

    • If frosting is too soft, refrigerate for 20–30 minutes before using.
