Biscuits Filled with Crab and Cheddar Cheese, Served with Lemon Butter

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup buttermilk, cold
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked crab meat, picked over for shells
  • 2 tablespoons fresh chives, chopped (optional)

For the Lemon Butter:

  • 1/2 cup unsalted butter, softened
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Salt to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the Biscuit Dough:
    • In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
    • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gently stir in the cold buttermilk until just combined; do not overmix.
    • Fold in the shredded cheddar cheese and the crab meat until evenly distributed.
  3. Shape the Biscuits:
    • Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
    • Use a biscuit cutter or the rim of a glass to cut out rounds of dough, placing them on the prepared baking sheet.
    • Gather the scraps, re-roll, and cut out more biscuits.
  4. Bake:
    • Bake the biscuits in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.
    • Remove from the oven and let them cool slightly on a wire rack.
  5. Make the Lemon Butter:
    • In a small bowl, combine the softened butter, lemon zest, lemon juice, and salt. Mix until smooth and well combined.
  6. Serve:
    • Serve the warm crab and cheddar biscuits with a generous dollop of lemon butter on top. Enjoy!

These biscuits are a delicious combination of savory crab, sharp cheddar, and bright lemon butter, perfect for breakfast or a light snack.
