Beans Grandma’s Hamburger & Vegetable Soup

“Grandma’s Hamburger and Vegetable Soup” is a comforting and hearty dish that typically includes ground beef, vegetables, and beans. Here’s a simple recipe for this delicious soup:

Ingredients:

  • 1 pound (450g) lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth (homemade or store-bought)
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup frozen green beans
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced potatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Brown the Ground Beef:
    • In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat.
    • Add the ground beef and cook, breaking it up with a spoon, until it’s browned and cooked through. Remove any excess fat.
  2. Add Aromatics:
    • Add the chopped onion and minced garlic to the pot with the ground beef.
    • Cook for 2-3 minutes until the onion is translucent and fragrant.
  3. Add Vegetables:
    • Add the diced carrots, celery, and potatoes to the pot.
    • Stir and cook for another 5 minutes, allowing the vegetables to slightly soften.
  4. Season and Simmer:
    • Pour in the beef broth and diced tomatoes (with their juice) into the pot.
    • Add the thyme, oregano, salt, and pepper.
    • Stir everything well, bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Add Beans and Corn:
    • Stir in the kidney beans, frozen corn, and frozen green beans.
    • Simmer for an additional 10-15 minutes, or until the beans and corn are heated through and the soup has thickened slightly.
  6. Taste and Adjust:
    • Taste the soup and adjust the seasoning with more salt and pepper if needed.
  7. Serve:
    • Ladle the Grandma’s Hamburger and Vegetable Soup into bowls.
    • Garnish with chopped fresh parsley if desired.

This hearty and comforting soup is perfect for a cozy family dinner. You can also serve it with a side of crusty bread or a sprinkle of grated Parmesan cheese for extra flavor. Enjoy!
