Baked Spinach Mushroom Quesadillas

Here’s a delicious recipe for Baked Spinach Mushroom Quesadillas:

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • Optional: salsa, sour cream, or guacamole for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • Heat olive oil in a large skillet over medium heat.
    • Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-6 minutes.
    • Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
    • Season with salt, pepper, cumin, and chili powder. Mix well and cook for another minute.
    • Remove the skillet from the heat and set the filling aside.
  3. Assemble the Quesadillas:
    • Lay out four tortillas on a flat surface.
    • Evenly distribute the spinach and mushroom mixture over each tortilla.
    • Sprinkle shredded cheese over the vegetable mixture.
    • Top each with another tortilla, pressing down gently to seal.
  4. Bake the Quesadillas:
    • Place the quesadillas on a baking sheet. You can lightly brush the tops with a bit of olive oil for a crispy finish.
    • Bake in the preheated oven for about 10-12 minutes, or until the tortillas are golden brown and the cheese is melted.
  5. Serve:
    • Remove from the oven and let them cool for a minute before cutting into wedges.
    • Serve with salsa, sour cream, or guacamole on the side.
