Air Fryer Stuffed Portobello Mushrooms

Air fryer stuffed portobello mushrooms make for a delicious and easy-to-prepare dish. Here’s a simple recipe for you to try:

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • 1 cup breadcrumbs (you can use regular or panko)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup diced tomatoes
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced red onion
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Prepare the Mushrooms: Clean the portobello mushrooms and remove the stems. Scrape out the gills with a spoon to create a clean cavity for the stuffing.
  3. Prepare the Filling: In a mixing bowl, combine breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, diced tomatoes, diced bell peppers, diced red onion, shredded mozzarella, and olive oil. Mix well until everything is evenly combined.
  4. Stuff the Mushrooms: Divide the filling mixture evenly among the portobello mushrooms, pressing it down gently to pack the stuffing.
  5. Air Fry: Place the stuffed mushrooms in the preheated air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches. Air fry for about 12-15 minutes or until the mushrooms are tender, and the stuffing is golden brown and crispy.
  6. Serve: Carefully remove the stuffed mushrooms from the air fryer and let them cool slightly before serving. Optionally, garnish with additional chopped parsley or a sprinkle of Parmesan cheese.
  7. Enjoy: Serve the air fryer stuffed portobello mushrooms as a delicious appetizer or side dish. They can also be enjoyed as a light lunch or dinner option.
