Air fryer scones are a quick and easy way to enjoy freshly baked scones without the need for an oven. Here’s a recipe for air fryer blueberry and cream scones:

Ingredients:

For the Scones:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

For the Glaze (optional):

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the Air Fryer:
    • Preheat your air fryer to 350°F (180°C). Depending on your air fryer model, this may take a few minutes.
  2. Prepare the Scone Dough:
    • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
    • Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Mix the Wet Ingredients:
    • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; you want the dough to come together, but it should still be slightly crumbly.
    • Gently fold in the blueberries.
  5. Shape the Scones:
    • Turn the dough out onto a lightly floured surface and shape it into a 1-inch thick circle.
    • Use a round cookie cutter or a sharp knife to cut the dough into scones. You can make them as large or as small as you prefer.
  6. Air Fry the Scones:
    • Place the scones in a single layer in the air fryer basket, leaving some space between them.
    • Cook for about 8-10 minutes or until the scones are golden brown and cooked through. Cooking time may vary depending on your air fryer, so keep an eye on them.
  7. Make the Glaze (Optional):
    • In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until you have a smooth glaze.
  8. Drizzle the Glaze:
    • Once the scones have cooled for a few minutes, drizzle them with the glaze. Allow the glaze to set before serving.
  9. Serve and Enjoy:
    • Enjoy your air fryer blueberry and cream scones warm with a cup of tea or coffee.

These scones are best when freshly baked, but you can store any leftovers in an airtight container at room temperature for a day or two.
