Fluffy Japanese Pancakes

Fluffy Japanese pancakes, also known as “soufflé pancakes,” are known for their airy, melt-in-your-mouth texture. Here’s a recipe to make these delightful pancakes at home.

Ingredients

For the Pancakes:

  • 2 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • A pinch of salt
  • Oil or butter for cooking

For Serving:

  • Powdered sugar
  • Fresh berries
  • Maple syrup or whipped cream (optional)

Equipment

  • Non-stick skillet or griddle
  • Ring molds (3-inch diameter, at least 2 inches tall)
  • Hand mixer or stand mixer
  • Spatula

Instructions

  1. Prepare the Egg Mixture:
    • Separate the egg whites and yolks into two separate bowls.
    • In the bowl with the egg yolks, add the milk and vanilla extract. Mix until combined.
    • Sift the flour and baking powder into the egg yolk mixture and mix until smooth.
  2. Whip the Egg Whites:
    • Using a hand mixer or stand mixer, beat the egg whites on medium speed until they start to form soft peaks.
    • Gradually add the sugar while continuing to beat the egg whites until they form stiff, glossy peaks.
  3. Combine Mixtures:
    • Gently fold one-third of the whipped egg whites into the egg yolk mixture to lighten it.
    • Carefully fold in the remaining egg whites until just combined. Be gentle to retain the airiness of the mixture.
  4. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over low heat and lightly grease with oil or butter.
    • Place the ring molds onto the skillet and fill each mold about three-quarters full with the batter.
    • Cover the skillet with a lid and cook for about 4-5 minutes until the pancakes have risen and the bottoms are golden brown.
    • Carefully flip the pancakes, cover, and cook for another 4-5 minutes until fully cooked through.
    • If the pancakes are browning too quickly, reduce the heat to prevent burning.
  5. Serve:
    • Remove the ring molds gently and transfer the pancakes to a serving plate.
    • Dust with powdered sugar and top with fresh berries.
    • Serve with maple syrup or whipped cream if desired.
