Better than pizza! Just grate the potatoes

Posted on June 1, 2024

Sure, here’s a recipe for a delicious and easy potato dish that’s better than pizza! This dish is a crispy potato pancake or latke, perfect as a snack or side dish. Let’s get started:

Crispy Potato Pancakes (Latkes)

Ingredients:

  • 4 medium-sized potatoes (Russet or Yukon Gold are great)
  • 1 small onion
  • 1 large egg
  • 1/4 cup all-purpose flour (or matzo meal for a traditional touch)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Optional: sour cream or applesauce for serving

Instructions:

  1. Prepare the Potatoes and Onion:
    • Peel the potatoes and onion.
    • Using a box grater, grate the potatoes and onion. You can also use a food processor with a grating attachment for faster preparation.
  2. Remove Excess Moisture:
    • Place the grated potatoes and onion in a clean kitchen towel. Squeeze out as much liquid as possible. This step is crucial for achieving crispy pancakes.
  3. Mix the Batter:
    • In a large mixing bowl, combine the grated potatoes and onion with the egg, flour, salt, and pepper. Mix well until the ingredients are evenly distributed.
  4. Heat the Oil:
    • Pour about 1/4 inch of vegetable oil into a large skillet. Heat the oil over medium-high heat until shimmering but not smoking.
  5. Fry the Pancakes:
    • Scoop about 2 tablespoons of the potato mixture for each pancake and flatten it into a round, thin patty with your hands.
    • Carefully place the patties into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.
  6. Drain and Serve:
    • Once the pancakes are cooked, transfer them to a plate lined with paper towels to drain excess oil.
    • Serve the crispy potato pancakes hot, with a dollop of sour cream or applesauce if desired.

Tips:

  • For extra flavor, you can add chopped fresh herbs like parsley or chives to the potato mixture.
  • Ensure the oil is hot enough before adding the potato mixture to avoid soggy pancakes.
  • Keep the cooked pancakes warm in an oven set to low heat if frying in batches.

Enjoy your crispy, golden potato pancakes! They’re a delightful treat that might just be better than pizza.
