Woolworth Icebox Pie is a classic no-bake dessert that’s known for its creamy and sweet filling with a hint of lemon flavor. Here’s a simple recipe to make this delicious dessert:

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (about 12 graham crackers)
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • 2 teaspoons lemon zest (optional, for extra lemon flavor)
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream

Instructions:

For the Crust:

  1. In a mixing bowl, combine the graham cracker crumbs and granulated sugar.
  2. Pour the melted butter over the crumb mixture and stir until the crumbs are evenly coated.
  3. Press the mixture into the bottom of a 9×13-inch baking dish or a similar-sized serving dish to create the crust. Use the back of a spoon or the bottom of a measuring cup to press it down firmly.
  4. Place the crust in the refrigerator to chill while you prepare the filling.

For the Filling:

  1. In a separate mixing bowl, combine the sweetened condensed milk, freshly squeezed lemon juice, lemon zest (if using), and vanilla extract. Mix until well combined. The mixture will thicken slightly as you stir.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the lemon mixture until well combined. Be careful not to overmix; you want to keep the mixture light and fluffy.

Assemble the Woolworth Icebox Pie:

  1. Pour the lemon and cream filling over the chilled graham cracker crust.
  2. Use a spatula to spread the filling evenly.
  3. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the pie to set.
  4. Before serving, you can garnish with additional lemon zest, whipped cream, or lemon slices for decoration if desired.
  5. Slice and serve your Woolworth Icebox Pie cold. Enjoy!
