Birria Wings with Consome

Birria wings with consome sounds like a delicious twist on traditional birria tacos! Here’s a recipe to make them:

Ingredients:

For the Birria Wings:

  • 2 lbs chicken wings
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 tablespoon vegetable oil

For the Consome:

  • Reserved broth from cooking the birria wings
  • Chopped cilantro, onion, and lime wedges for serving

Instructions:

1. Prepare the Chilies:

  • Remove the stems and seeds from the dried chilies.
  • Heat a dry skillet over medium heat and toast the chilies for a few seconds on each side until fragrant. Be careful not to burn them.
  • Transfer the toasted chilies to a bowl and cover with hot water. Let them soak for about 20 minutes until softened.

2. Make the Birria Sauce:

  • Once the chilies are softened, drain them and transfer them to a blender.
  • Add chopped onion, minced garlic, ground cumin, dried oregano, smoked paprika, salt, pepper, and chicken broth to the blender.
  • Blend until smooth, creating a thick sauce.

3. Cook the Birria Wings:

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, toss the chicken wings with the birria sauce until they are evenly coated.
  • Heat vegetable oil in an oven-safe skillet over medium-high heat.
  • Once the oil is hot, add the chicken wings and sear them for 2-3 minutes on each side until they are browned.
  • Pour any remaining birria sauce over the wings and transfer the skillet to the preheated oven.
  • Bake for 25-30 minutes until the wings are cooked through and the sauce is bubbly.

4. Make the Consome:

  • While the wings are cooking, strain the remaining birria sauce through a fine-mesh sieve into a pot to remove any solids.
  • Heat the strained sauce over medium heat and let it simmer for about 10-15 minutes to thicken slightly.
  • This will be your consome, the flavorful broth served alongside the wings.

5. Serve:

  • Once the wings are cooked, remove them from the oven and let them cool slightly.
  • Serve the birria wings hot with the consome on the side.
  • Garnish with chopped cilantro, onion, and lime wedges for extra flavor.
