Cucumber Roll-Up Recipe:

Ingredients:

  • 2 large cucumbers
  • 1 cup of cream cheese, softened
  • 1/4 cup of finely chopped red bell pepper
  • 1/4 cup of finely chopped green onions
  • 1/4 cup of shredded carrots
  • 1 tablespoon of chopped fresh dill (optional)
  • Salt and pepper to taste
  • Toothpicks (optional, for securing the rolls)

Instructions:

  1. Prepare the Cucumbers:
    • Wash the cucumbers thoroughly.
    • Using a vegetable peeler, slice the cucumbers lengthwise into thin strips. You can also use a mandoline slicer for precision.
  2. Mix the Filling:
    • In a bowl, combine the softened cream cheese, chopped red bell pepper, green onions, shredded carrots, and chopped dill (if using).
    • Mix well until all the ingredients are evenly incorporated.
    • Season with salt and pepper to taste.
  3. Assemble the Roll-Ups:
    • Lay out the cucumber slices on a clean surface.
    • Spoon a small amount of the cream cheese mixture onto each cucumber slice.
    • Carefully roll up the cucumber slices, starting from one end. If needed, secure the rolls with toothpicks.
  4. Chill and Serve:
    • Place the cucumber roll-ups in the refrigerator for at least 30 minutes to allow them to firm up.
    • Once chilled, remove the toothpicks (if used) and slice the rolls into bite-sized pieces.
  5. Garnish (Optional):
    • Garnish with additional chopped dill, finely chopped green onions, or a sprinkle of paprika for added flavor and presentation.
  6. Serve and Enjoy:
