CHOCOLATE PECAN TURTLE CLUSTERS

Certainly! Chocolate pecan turtle clusters are a delicious treat that combines the rich flavors of chocolate, pecans, and caramel. Here’s a simple recipe for making chocolate pecan turtle clusters:

Ingredients:

  • 1 cup pecan halves
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup light corn syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup milk or dark chocolate chips
  • Sea salt for sprinkling (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the pecan halves in small clusters on the prepared baking sheet.
  3. In a saucepan over medium heat, melt the butter. Add the brown sugar, corn syrup, vanilla extract, and a pinch of salt. Stir continuously until the mixture comes to a gentle boil.
  4. Allow the mixture to boil for about 2-3 minutes, stirring constantly. This will help it thicken slightly and develop a caramel-like consistency.
  5. Spoon the caramel mixture over each pecan cluster on the baking sheet. Be careful as the caramel will be hot.
  6. Bake the pecan clusters in the preheated oven for about 8-10 minutes, or until the caramel is bubbly and slightly darkened.
  7. Remove the baking sheet from the oven and let the clusters cool on the sheet.
  8. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth.
  9. Drizzle or spoon the melted chocolate over the caramel and pecan clusters.
  10. Optional: Sprinkle a bit of sea salt over the chocolate while it’s still melted for a delicious sweet and salty combination.
  11. Allow the chocolate to set completely before removing the clusters from the baking sheet.
  12. Once set, carefully peel the clusters off the parchment paper and store in an airtight container.
