Lemon Cake

Certainly! Lemon cake is a delightful and refreshing dessert that’s perfect for citrus lovers. Here’s a simple recipe for a classic lemon cake:

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice
  • Zest of 1 lemon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl or stand mixer, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the lemon zest and fresh lemon juice.
  7. Pour the batter into the prepared bundt pan and smooth the top with a spatula.
  8. Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  10. Once the cake is done, let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  11. Drizzle the lemon glaze over the cooled cake. If desired, sprinkle with additional lemon zest for extra flavor.
  12. Slice and enjoy your delicious homemade lemon cake!
