⭐ Crock Pot Chicken Thighs Recipe

πŸ“ Ingredients:

  • 6 bone-in, skin-on chicken thighs (or boneless if preferred)

  • 1 tsp salt

  • Β½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp olive oil

  • 1 cup chicken broth

  • 2 tbsp soy sauce (optional for umami boost)

  • 2 tsp cornstarch + 2 tbsp cold water (optional, for thickening)

  • 1 sliced onion

  • 3–4 garlic cloves, smashed

  • Baby carrots or diced potatoes (for a one-pot meal)

  1. Season Chicken:
    Mix salt, pepper, paprika, garlic powder, and onion powder. Rub mixture all over the chicken thighs.

  2. Sear (Optional but Recommended):
    Heat olive oil in a skillet over medium-high. Sear chicken thighs skin-side down until golden, about 3–4 minutes. Flip and sear the other side for 2–3 minutes.

  3. Add to Crock Pot:
    Place onions, garlic, or vegetables in bottom of the slow cooker (if using). Add seared chicken thighs on top.

  4. Pour Liquid:
    Combine broth and soy sauce. Pour over the chicken.

  5. Cook:

    • Low: 6–7 hours

    • High: 3–4 hours
      (Internal temp should reach 165Β°F / 74Β°C)

  6. Optional Gravy:
    Remove chicken and keep warm. Whisk together cornstarch and water, stir into juices in the crockpot, and cook on high 10–15 minutes until thickened.
