Beef and Macaroni Soup

Beef and Macaroni Soup is a hearty and comforting soup that combines ground beef, macaroni pasta, vegetables, and a flavorful broth. Here’s a basic recipe for making this delicious soup:

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup elbow macaroni (or any pasta of your choice)
  • 6 cups beef or vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Heat a large soup pot over medium heat and add the olive oil. Add the chopped onion, garlic, and ground beef. Cook, breaking up the beef with a spoon, until the meat is browned and the onion is translucent.
  2. Add the carrots and celery to the pot and cook for about 5 minutes, or until they begin to soften.
  3. Stir in the diced tomatoes, dried thyme, dried oregano, salt, and black pepper. Cook for a few more minutes to combine the flavors.
  4. Pour in the beef or vegetable broth and bring the soup to a boil. Once it boils, reduce the heat to a simmer and let it cook for about 15-20 minutes, or until the vegetables are tender.
  5. In a separate pot, cook the macaroni pasta according to the package instructions. Drain the pasta and set it aside.
  6. When the soup is ready, add the cooked macaroni to the pot and simmer for a few more minutes to heat through.
  7. Taste the soup and adjust the seasoning with more salt and pepper if needed.
  8. Serve the Beef and Macaroni Soup hot, garnished with fresh parsley if desired.

This soup is versatile, and you can add other vegetables or seasonings to suit your taste. It’s a great meal for a cold day and is sure to be a family favorite. Enjoy!
