Poor Mans Prime Rib

“Poor Man’s Prime Rib” is a term used for a less expensive cut of beef that is prepared and cooked in a manner similar to prime rib, resulting in a dish that has comparable tenderness and flavor. One common cut used for this purpose is chuck roast. Here is a simple recipe for preparing a “Poor Man’s Prime Rib”:

Ingredients:

  • 1 3-4 pound chuck roast
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a small bowl, mix together the salt, pepper, garlic powder, thyme, and rosemary.
  3. Rub the chuck roast all over with the olive oil, then season it generously with the herb mixture.
  4. Place the seasoned chuck roast on a rack in a roasting pan.
  5. Roast the meat in the preheated oven for about 20 minutes per pound, or until it reaches your desired level of doneness. For medium-rare, the internal temperature should be around 135°F (57°C). For medium, it should be around 145°F (63°C).
  6. Remove the roast from the oven and let it rest for 10-15 minutes before carving.
  7. Slice the roast and serve it with your choice of sides and sauces.

Although it may not be the same as a prime rib, “Poor Man’s Prime Rib” can still be a delicious and budget-friendly alternative. Enjoy this flavorful and tender roast for a satisfying meal.
