Easter Day Jello Cookies are a fun, colorful, and festive treat perfect for celebrating the holiday! These cookies use Jello (gelatin) to give them a vibrant color and a slightly fruity flavor. Here’s a simple recipe you can try:

Easter Day Jello Cookies Recipe

Ingredients:

  • 1 box of your favorite flavored Jello (any color, such as strawberry, lime, or orange)
  • 1 cup butter (softened)
  • 1/2 cup sugar
  • 1 egg
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Sprinkles (optional, for extra Easter fun!)

Instructions:

  1. Preheat your oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Make the dough:

    • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg and vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter mixture, mixing well.
  3. Add the Jello: Mix in the Jello powder to the dough. The amount of Jello will give the cookies their color and flavor, so feel free to experiment with different flavors!

  4. Form the cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. For an extra fun touch, you can lightly roll the dough balls in some extra Jello powder or colorful sprinkles.

  5. Bake: Bake the cookies for 10-12 minutes or until the edges are slightly golden.
